Dallas Observer Partners with Familystyle Food for a Trove of Recipes - Dallas Observer

The Observer recently partnered with Familystyle Food, a recipe website offering easy, family-style recipes from Karen Tedesco, a professionally trained chef, cookbook author and former food editor at the Village Voice in New York.

You'll find the Familystyle Food section on our homepage. As you're perusing our site, if those classic Italian meatballs look amazing, then a recipe for dinner is just a click away.

That's how I came across the Tuscan tomato basil soup (pappa al pomodoro) recipe. It uses just a few ingredients — tomatoes, garlic, onion and basil — but instead of a dairy product to thicken the soup, it calls for crusty bread. It works perfectly.

Karen Tedesco is the chef behind Familystyle Food, a recipe website readers can find on the Observer's homepage.

Tedesco's love for food and cooking grew from time spent around the kitchen table with her Italian-American family. That meatball recipe is her mother's. Her recipe includes helpful tips to make superior meatballs (which include, in part, ground beef chuck for a higher fat content and milk-soaked bread crumbs). There's also a tip on how to make the dish gluten-free.

We asked Tedesco about what goes into creating such a large trove of recipes, including who gets to taste-test the dishes and how many times it takes to perfect one recipe.

"It really depends on the dish," Tedesco says. "Most of the time I'll test a recipe at least twice before publishing. Although I might nail the exact ingredients, process and timing on the first go, I often cook it again and refine the details even after I publish it. That's the beauty of having a dynamic recipe site where I can make tweaks and changes that appear instantly."

Family, friends and neighbors get to enjoy most of the test-runs.

Familystyle Food recipes are broken into categories, such as trending (creamy turkey pumpkin chili), Mediterranean, chicken, vegetarian and vegan, plus clusters of recipes embedded in those groups, including 25 simple vegetarian recipes.

The 25 Thanksgiving dinner sides are interesting as well, because it's a known fact that sides are what we look forward to the most on Thanksgiving, aside from the Cowboys focusing on the run game. This roasted acorn squash with brown butter recipe looks amazing. What's best about this recipe is that it gives details on how to cut the squash and whether you should peel before roasting.

USDA seeking Northeast Indigenous food experts to help create cooking videos, recipes - Connecticut Public

The U.S. Department of Agriculture wants to work with Northeast chefs and foragers as part of a project to restore Indigenous foodways.

In 2021, the USDA launched its Indigenous Food Sovereignty Initiative. According to Director of the Office of Tribal Relations Heather Dawn Thompson, the goal is to rethink the USDA’s food and nutrition programs from an Indigenous perspective.

“Help us really think about addressing climate change by encouraging sustainable, Indigenous agricultural practices, and really support our Indigenous communities' goals to restore their cultural balances, as those are linked to their Indigenous foods,” Thompson said.

So far, the USDA has collaborated with chefs and foragers in the western part of the country to create cooking videos and recipes. These show how to incorporate Indigenous foods into what people receive through the USDA’s Food Distribution Program on Indian Reservations. Examples include bison meatballs with dandelion tomato sauce and pasta, mulberry rosehip bars and pinto bean dip with roasted pine nuts.

In the coming year, Thompson says the department wants to create similar resources for the U.S. Northeast and Southeast.

Those with expertise in Northeast Indigenous foods and interest in working with the USDA can email tribal.relations@usda.gov. Thompson says they’re hoping to choose chefs and foragers to work with by January.

As far as she can tell, Thompson — who is a member of the Cheyenne River Sioux Tribe — says this is the first time the government has done this kind of collaborative foodways work with Indigenous communities. And there's a lot of trust to rebuild.

“So it's really hard history we come with. You know, the federal government actively participated in destroying some of these Indigenous foodways," she said. "And there are heavy conversations that have happened in order to start to build that trust back up.”

Thompson says the USDA is trying to rebuild trust by sending its staff directly to tribal nations, and creating relationships one person at a time.

1. Pasta

2. Stir-fry

3. Fried Rice 

Fried rice is one of the most versatile dishes which you can make with pretty much anything. From Asia, to Nigeria, to Greece, there are so many variations of fried rice around the world. Chef, author and restaurateur Kylie Kwong says the trick is to "keep it really simple and traditional- just some really fresh and fluffy eggs, onion, bacon or Chinese sausage, ginger and some spring onions".

4. Omelette 

Whether it's plain, loaded, crispy or gooey, an omelette is one versatile dish that allows you to put your creativity to the test. From simple pan-cooked breakfasts like this blue cheese and mushroom omelette to hearty tortillas like this new potato and chorizo tortilla, there are so many ways to enjoy an omelette.

5. Soup

Home-cooked soups are nothing but nourishing and comforting. Practically any vegetable from cauliflower to asparagus, potato and even frozen peas can be made into soup.

It can be a way to use up leftover roast from the night before, like this chicken and vegetable soup with parsley pesto, or can be upgraded to a filling dish by throwing in some noodles, like this popular Indonesian chicken noodle soup (soto ayam).

6. Brownies 

Do you like them fudgy, dense or crumbly?  There are so many ways to bake brownies and so many ways to jazz it up, from peanut butter to coconut, miso, and even veggies like beetroot and eggplant.

Brownies are one of those sweets which you can experiment with and have a relatively good success rate each time.
